Harvest during the third decade of September. At the end of the alcoholic fermentation the wine remained in the tank for about 6 months, then the wine is bottled without filtration.
AROMA AND TASTE
Very fruity aroma, with hints of plum, cherries, raspberry and black currant and nuances of toasted wood. Taste dry, warm, soft, full-bodied, with a presence of well-blended soft tannins.
PAIRING
Cured meats, first and second courses of land with great structure, rich in seasonings and with a marked flavor. Excellent with medium and long aged cheeses.
Harvest during the second decade of September. Alcoholic fermentation at a controlled temperature of about 15°C.
AROMA AND TASTE
Very intense floral mineral scent with hints of pineapple, apricot, broom and magnolia. Dry, warm, soft, full-bodied taste, with strong aromatic persistence
PAIRING
As an important aperitif that is well suited to appetizers, first and second courses of sea and land with a discreet structure. It can also accompany medium-aged cheeses.
The harvest of the grapes takes place when they are completely ripe. Soft pressing of the grapes and the static cold settling. The alcoholic fermentation carried out in steel tanks at temperatures around 12-14°C. It ends within 30 days.
